Clams – The Art of Cleaning Them

I love clams in anyway – boiled, baked, clam chowder, deep fried and definitely raw with lemon and of course with a tall, cold glass of beer! Before we can eat this delicacy we must clean them. The first time I saw the cleaning of clams was at Randazzo’s clam bar in Brooklyn, they made it look so easy and it is! It is really simple just follow my pictures and you will never have a problem opening clams!
If they are freshly dug and not store bought then you need to take a sponge, run them under cold water and rub them until all sand has been removed. If they are store bought, just follow my instructions below.
Let your clams soak for about ½ hour.
After ½ an hour they should start opening, disregard all that aren’t opened.
You should be able to fully open them !!!!
Take a knife and slide it across the opening and that’s it they should open in a jiffy.
