Stuffed Meat Roast Rolls Recipe (Greek Style!)

A little bit of what I learned from trial and error, and a little bit from reading and plenty of taste tests is…
I concocted my mini gourmet stuffed meat roast rolls. I just love creating, fancy and delish dishes for my family. A very easy dish even a novice could make.
Just follow my steps of this stuffed meat roast rolls recipe:
Ingredients
5 pieces of saddle of beef
1 large onion
1 red pepper
3 garlic cloves
1 tomato
1 tablespoon of oregano
small bowl of feta crumbs ( preferably kefalonian) it’s more spicy
small bowl of parsley
small bowl of various yellow cheeses
pepper corns
a bottle of red semi sweet wine
salt & pepper to taste
cotton or linen string
Your saddle of beef should look like this, you don’t need to pound it because the wine will tenderize it. The meat I used is the saddle of the beef, it’s a tender cut of meat. Remember to always wash your meat before you cook it.
Place your meat in a bowl or in the pan that you will cook it in, add your onions, garlic,red pepper, pepper corns, salt and pepper, fill it with the semi sweet red wine, cover and let it marinate for 3 hours.
After 3 hours take your first slice and place on a flat surface, I used a cutting board. Add feta, tomatoes, yellow cheeses of your choice pepper corns ( 3 -4 ), onions, parsley,salt and pepper to taste.
Take the end flap and flip like shown in the picture below.
Take the other two sides and wrap like shown in the picture below.
Tuck the last flap on the inside or just flap it on top.
Take your cotton string and tie a knot at one end and then wrap the rest
This is how it should look like once you have wrapped the string around it.
Leave some wine from the marinating along with the pepper corns and place your beef rolls inside.
Add onions, garlic, red peppers, olive oil, salt, pepper to taste and oregano cover and bake at 356 for about one hour or until tender.
When ready take out of the oven, remove the string, cut your roll and serve with baked potatoes.
